When working with food that releases water or oil, such as garlic, ginger or citrus rind, moisten the rasp plate with some water before use. When using dry food such as nutmeg or parmesan cheese, keep the plate dry.
When preparing garlic, first peel the skin from the garlic clove. If using a garlic peeler, place a garlic clove inside the tube. Then, roll the tube briskly on a firm surface with the palm of your hand until you hear a "crushing" sound.
Hold the garlic clove between your thumb and index finger with the root pointing up and the tip pointing down. Grate the garlic by rubbing the clove over the textured surface of the plate, in either a circular or back and forth motion.
Use the brush to transfer grated foods to another plate, or sweep a desired amount onto other foods. Also, use the brush to mix together grated foods and other ingredients to create marinades, dressings, or sauces.
